Ingredients
- 2 green apples
- 1/2 lemon
- 1 small to medium red onion, very thinly sliced
- 1/4 cup chopped dill
- 1 teaspoon salt
- About 1/3 cup sugar
- 1 1/4 cups cider vinegar
- 4 fresh bay leaves
- 1/2 teaspoon whole black peppercorns
Directions
Quarter the apples then cut away core and thinly slice. Add them to a medium bowl, douse them with a little lemon juice and add the onions and dill.
In a small pot over medium heat add the vinegar, bay leaves, peppercorns, salt and sugar. Stir and heat until the sugar has completely dissolved. Pour evenly over the apples and let stand 20 minutes, turning occasionally. Serve or cover and refrigerate until ready to use.

I made this with the Pork Chops with Beer and bacon gravy........ Just as Rachael had on her show the other day. I was a little more that worried that it would be just a really odd flavor for my family...... But it was WONDERFUL!!!!!!!!! Can't wait to have it again..........

came out fine. just not my taste. the onions were fantastic but pickled apples?? mixed reviews from the fam but no one ate the leftovers

@vnadine....that is how my grandmother taught me to cook and I have no problem with it, but I can see how someone who is learning to cook would have a problem with it. This was a pretty dish, but not a big pickled apple and onion fan.
