Ingredients
- 2 green apples
- 1/2 lemon
- 1 small to medium red onion, very thinly sliced
- 1/4 cup chopped dill
- 1 teaspoon salt
- About 1/3 cup sugar
- 1 1/4 cups cider vinegar
- 4 fresh bay leaves
- 1/2 teaspoon whole black peppercorns
Directions
Quarter the apples then cut away core and thinly slice. Add them to a medium bowl, douse them with a little lemon juice and add the onions and dill.
In a small pot over medium heat add the vinegar, bay leaves, peppercorns, salt and sugar. Stir and heat until the sugar has completely dissolved. Pour evenly over the apples and let stand 20 minutes, turning occasionally. Serve or cover and refrigerate until ready to use.

Made the apple and onion pickles - used organic gala apples because that is what I had. I could eat this "relish" all by itself (and did, several spoonfuls! But I also made the pork chops and potatoes that were part of this broadcast. The apple-onion pickles really brought the zing to the chops! It sounded weird, but it tasted super.

I made this with the Pork Chops with Beer and bacon gravy........ Just as Rachael had on her show the other day. I was a little more that worried that it would be just a really odd flavor for my family...... But it was WONDERFUL!!!!!!!!! Can't wait to have it again..........
