Ingredients
- 2 (15-ounce) cans dark red kidney beans, rinsed and drained well
- 1 red bell pepper, seeded and chopped
- 3 scallions, chopped, whites and greens
- 1 rib celery, chopped
- 1/4 cup (a couple of handfuls) chopped flat-leaf parsley
- 1 cup sweet red pepper relish
- 2 tablespoons (2 turns around the bowl in a thin stream) light olive oil or vegetable oil
- 1 tablespoon (2 splashes) white distilled vinegar
- Coarse salt and pepper
Directions
Combine all ingredients in a medium bowl and toss well; adjust seasonings.

Maybe it was the brand I bought, but I wasn't crazy about the sweet pepper relish in this. I might just use roasted peppers or a zestier relish next time. I also used a yellow bell pepper instead of red, and it made the salad very pretty.

This is the best bean salad I have had. Took it to our Memorial Day Block party and everyone loved it. Several asked for the recipe. It's simple and quick to make, it is very refreshing, and it is so healthy you don't feel guilty about having seconds. I have made this salad exactly as called for by the recipe, and I have made it with fresh cilantro instead of the parsley. It's great both ways.
