Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 pounds ground chicken or turkey breast
  • 1 carrot, peeled and chopped or grated
  • 2 stalks celery, chopped
  • 1 yellow onion, finely chopped
  • 2 to 3 cloves garlic, finely chopped or grated
  • Salt and freshly ground black pepper
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/4 to 1/3 cup hot sauce (recommended: Frank's Red Hot)
  • 1 cup tomato sauce
  • 1 cup chicken stock
  • 8 good quality burger rolls, split and toasted
  • 1 cup blue cheese crumbles
  • 2 large dill pickles, chopped

Directions

Heat a large skillet with extra-virgin olive oil over medium-high heat. Add meat and break it up with wooden spoon, cook 5 to 6 minutes. Add in carrots, celery, onions and garlic, season with salt and freshly ground black pepper, cook 7 to 8 minutes more. In a bowl combine the vinegar, sugar, Worcestershire, hot sauce, tomato sauce and stock. Pour into the pan and stir to combine. Simmer a few minutes more. Pile sloppy Buffalo filling onto buns and top with blue cheese and chopped pickles.

    These were very good. I added some smoked paprika and dry mustard and left out the broth to make a thicker sauce. Even with... just 1/4 cup of hot sauce, my kids didn't seem to care much for them. Next time (and there will be a next time) I will cut back a bit on the olive oil to make them even healthier. They're a great way to sneak in some veggies. I served these with oven baked wedge fries and my husband and I enjoyed them as something a little different.Read more

    I just finished making this for dinner and my husband and I loved it. I made it how the recipe says except I added about 2... tablespoons flour to make it a little thicker, and we skipped the blue cheese since neither one of us like it and just put a little ranch on top. YUMMY.Read more

    So good I had the leftovers for BREAKFAST the next day!!

    I saw this on a rerun one day and made it a couple weeks later off the top of my head, so I forgot a couple things such as... the worcesire and I had to use a little white vinegar because I didn't have red wine vinegar, and I substituted a half of a little can of tomato paste for the cup of tomato sauce, because I was afraid it would taste too tomatoey. I also added the carrots and celery at the same time as the sauce, because I wanted them to be a tiny bit crunchy still instead of soft like the onion. I also thought it was way too soupy, so I added about a teaspoon of corn starch (dissolved in cold water of course) and simmered for about ten minutes, then let it cool a little and it thickened up perfectly! I also suggest letting it simmer for at least ten to 15 minutes even if you don't add the cornstarch, because the flavor really got into the ground chicken and was perfect. I LOVED the recipe, I really did eat it for breakfast the next day. My husband hates celery and onions, so he thought it was great but asked me to make it without those two things next time. I think I will still use my version of the sauce next time. We also don't like bleu cheese so I just put a slice of cheddar and we loved that, I think I will spread a little ranch on the buns next time too.     Better the Next Day

    I made this last night for dinner and it was a little runny for me too. I used the right amount of chicken, but I guess it... didn't absorb enough liquid. I ate leftovers for lunch today and it was awesome! I don't like blue cheese, so I spread some thick ranch dip on both sides of the bun and it was yummy! I will make this receipe again, but probably on a Sunday night for lunch for the week. Read more
