Directions

Place the beans and water in a large saucepan over high heat and bring to a boil. Reduce the heat to low, cover and cook until the beans are just soft, about 1 hour. Remove from the heat. Drain the beans and cool under running water. Drain thoroughly and spread on paper towels to dry.

Preheat an oven to 425 degrees F. Toss beans with the olive oil and sprinkle with salt, lime juice and cayenne. Spread beans out on a baking sheet and place in oven. Roast until beans begin to brown slightly. Serve warm or room temperature.

    I was looking for a way to make Lima beans interesting for my toddler and came across this recipe, and I'm glad I did because she loves it! However, I switched out the Cayenne Pepper with Paprika though, and it was still DELICIOUS! I was never a big fan of Lima beans, but after my mother and I tasted these, I ended up making a ton more for us to munch on too. This I think is great as a side or a snack!

    This was a delicious side. I substituted lemon juice because it is all I had and it still turned out excellent. It is a nice variation on the usual plain old lima bean, yet it is still simple. I highly recommend it.

    I read the reviews and they were very helpfull. For mine I added more salt and also montreal steak seasoning! They turned out great! My children 3 and 1 years old loved them as well. Thank You.
