Ingredients

  • 1/4 cup olive oil
  • 2 finely diced shallots, or 1 white onion, finely diced
  • 1 1/2 pounds mushrooms, cleaned and sliced
  • 2 cups Marsala wine
  • 1 cup beef stock
  • 1 tablespoon freshly chopped thyme leaves
  • 8 (8 to 10-ounce) New York Strip steaks
  • Salt and freshly ground black pepper
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 bunch fresh chives, chopped

Directions

Begin the Marsala sauce by heating the olive oil in a large saute pan. Cook the shallots (or onion) and mushrooms gently until they become translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by two-thirds.

Preheat the grill to medium-high heat and season meat on both sides with salt and pepper. Sear the meat on both sides, and grill to about 128 degrees F internal temperature for medium-rare. Remove meat from grill and let rest.

Strain Marsala sauce and whisk in butter to finish. Season with salt and pepper, as needed. Spoon the sauce over the grilled steaks, garnish with chopped chives, and serve.

    BEAUTIFUL RECIPE...

Rated: 5 stars out of 5
I made this for myself and my boyfriend two nights ago. WE LOVED IT!!! I've made Giada's chicken marsala w/ marscapone and... mustard sauce and it was absolutely delicious. But I wanted to try something different with steak (only because I had so much Marsala wine leftover-LOL). I had the NY strip and he loves T-bone steak. Served it over Paula Dean's garlic mashed potatoes. WE LOVED THIS RECIPE!!!! I had to cut the portion size down for only two people (2 steaks). It was so good my boyfriend is still talking about it. Please try it. You won't be dissappointed...AT ALL. Read more

    Five Star Favorite!

Rated: 5 stars out of 5
Just made this sauce for sirloin steak dinner- everyone LOVED it, it was pretty easy to do, and it was incredibly tasty. It... isn't a real thick sauce, like at some restaurants the marsala sauce is very thick, but it more than made up for it with flavor. I had a hard time finding a real bottle of marsala wine, but finally did in a local grocery store. (Yay! Publix!) Do not use the "marsala cooking wine" you find in the vinegar section, it simply will not do justice to this recipe. Hunt down a bottle of wine, and enjoy! ( I also used 1 tsp. dried Thyme, because I didn't have fresh.)Read more

    Definitely a winner!

Rated: 5 stars out of 5
I prepared this dish for my family, and they deemed it on par with what you would receive at a steakhouse. Robert's sauce... strikes all of the right cords; thick consistency and tangy without disguising the flavor of the meat itself. And as an added bonus, it is a fairly simple meal to prepare for inexperienced cooks such as myself. What more can you ask for? :)Read more

    Delicious

This was the best steak sauce I have ever tasted. My husband put his own seasonings on the steak and we poured this over... them. I will never fix steak w/o this again.Read more
