Ingredients
- Roasted eggplant slices
- Spicy pasta sauce
- 1 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1/4 cup chopped fresh basil leaves
Directions
Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
Arrange eggplant slices on prepared baking sheet. Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan. Bake 8 to 10 minutes, until cheese is bubbly. Top with basil before serving.

How can something so easy taste so good! I roasted slices of Vidalia onions along with the eggplant and put them on the eggplant slices when assembling. Brought a sweetness to any bitterness from the eggplant. Served over fresh fettucini....a vegetarian's delight!
