Ingredients

  • 2 sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon paprika
  • Salt and ground black pepper

Directions

Place potatoes in a shallow (microwave-safe) dish and add about 1/4-inch of water. Cover and microwave on HIGH for 3 to 4 minutes, until just soft. Drain and set aside.

Heat oil in a large skillet over medium heat. Add onion and saute 3 minutes, until soft. Add sweet potatoes, vinegar and paprika and cook 3 to 5 minutes, until potatoes are golden. Season, to taste, with salt and black pepper.

This hash was palatable, but overall very bland. Next time will add more seasoning and more red wine vinegar. Good place to... start tho.Read more

This sweet potato hash goes great with the Blue Cheese Stuffed Turkeyburgers. I like to use different cheese, it's a great... way to change up the taste.Read more

    Enjoyed this one

I made these for a family Fourth of July breakfast. Everyone seemed to enjoy them very much. I will say, though, that using... the microwave to cook the potatoes first wasn't much of a success for me. (Then again, I do have an old microwave.) However, I ended up putting the sweet potato in the oven and that worked just fine. I would make these again.Read more
