2 cups frozen or canned corn, thawed and/or drained

4 ounces canned pimento, diced

1 (4-ounce) can diced green chiles

1 teaspoon ground cumin

Salt and ground black pepper

1 tablespoon chopped parsley leaves


  1. In a medium bowl, combine corn, pimento, green chiles, and cumin. Mix well and season to taste with salt and black pepper. Garnish with fresh parsley.
