Ingredients

  • 1/2 cup butterscotch caramel sauce
  • 1 cup brown sugar
  • 1 teaspoon cinnamon extract
  • 1/2 teaspoon cayenne pepper
  • 3 cups pumpkin seeds, roasted
  • 1 cup almonds, crushed

Directions

Lightly coat baking sheet with cooking spray and set aside.

In a large skillet, slowly melt the caramel sauce and sugar. When melted stir in cinnamon extract and cayenne. Continue cooking until mixture reaches a temperature of 310 degrees F. Stir in pumpkin seeds until completely coated. Spread caramelized seeds onto the baking sheet and sprinkle with crushed almonds. Separate seeds with wooden spoon until cooled.

Cook's Notes:

Melted sugar is very hot. Please use extreme caution when handling and pouring. Pumpkin seeds may be purchased already roasted. If using the seeds from a jack-o-lantern, rinse and clean seeds. Place on a baking sheet, lightly coated with cooking spray, in a preheated 250 degree F oven. Roast seeds for about 1 hour stirring every 15 minutes. The actual seed of the pumpkin is inside the hull. The hull is edible.

    I read the other reviews -- and I think this is much better than most of the other raters. I used peanuts because I didn't have almonds. Cool on a Silpat sheet if you have one. Also, you need to use a candy thermometer and make sure the sugar mixture doesn't get too hot. It roasted my pumpkin seeds at 350 for 20 min. stirring half way through.

    With the cayenne, this is really an adult treat.

    I liked it. By the way, I just started watching the network about 2 years ago after suffering some strokes and now am pretty limited in what I can do and where I can go, but I seem to be watching fairly new programs by Sandra Lee. She wears up to date clothes and looks very nice so I'm just wondering when was her show cancelled?
    I know a lot of chefs I've seen and liked don't seem to be around long and I wonder what happened to them. I hope Sandra never gets cancelled because she has some very good information on her Semi-homemade show and also her money saving one.
    May she never leave. Keep 'em coming Sandra.

    I recently subscribed to the magazine and missed the first few issues and would like to get the first issues. If someone can tell me how, I would appreciate your sharing the info with me. There was a form that I could fill out to get them, but it required me to enter my account number, however, my being so unorganized since my strokes, I cannot find any paperwork and can't figure out the account number on my mailing label on the magazine itself. I once saw where I could "contact us",, but can no longer find that. It's a shame that I am so afflicted since the strokes, but I am also in my 70's and so I blame that somewhat.
