1/2 cup butterscotch caramel sauce

1 cup brown sugar

1 teaspoon cinnamon extract

1/2 teaspoon cayenne pepper

3 cups pumpkin seeds, roasted

1 cup almonds, crushed

Lightly coat baking sheet with cooking spray and set aside.

In a large skillet, slowly melt the caramel sauce and sugar. When melted stir in cinnamon extract and cayenne. Continue cooking until mixture reaches a temperature of 310 degrees F. Stir in pumpkin seeds until completely coated. Spread caramelized seeds onto the baking sheet and sprinkle with crushed almonds. Separate seeds with wooden spoon until cooled.

Cook's Notes:

Melted sugar is very hot. Please use extreme caution when handling and pouring. Pumpkin seeds may be purchased already roasted. If using the seeds from a jack-o-lantern, rinse and clean seeds. Place on a baking sheet, lightly coated with cooking spray, in a preheated 250 degree F oven. Roast seeds for about 1 hour stirring every 15 minutes. The actual seed of the pumpkin is inside the hull. The hull is edible.

A good way to use pumpkin seeds!

Rated: 4 stars out of 5
I read the other reviews -- and I think this is much better than most of the other raters. I used peanuts because I didn't... have almonds. Cool on a Silpat sheet if you have one. Also, you need to use a candy thermometer and make sure the sugar mixture doesn't get too hot. It roasted my pumpkin seeds at 350 for 20 min. stirring half way through. With the cayenne, this is really an adult treat. Read more

    I'm no expert, BUT

Rated: 5 stars out of 5
I liked it. By the way, I just started watching the network about 2 years ago after suffering some strokes and now am... pretty limited in what I can do and where I can go, but I seem to be watching fairly new programs by Sandra Lee. She wears up to date clothes and looks very nice so I'm just wondering when was her show cancelled? I know a lot of chefs I've seen and liked don't seem to be around long and I wonder what happened to them. I hope Sandra never gets cancelled because she has some very good information on her Semi-homemade show and also her money saving one. May she never leave. Keep 'em coming Sandra. Vickie Peek ALSO: I recently subscribed to the magazine and missed the first few issues and would like to get the first issues. If someone can tell me how, I would appreciate your sharing the info with me. There was a form that I could fill out to get them, but it required me to enter my account number, however, my being so unorganized since my strokes, I cannot find any paperwork and can't figure out the account number on my mailing label on the magazine itself. I once saw where I could "contact us",, but can no longer find that. It's a shame that I am so afflicted since the strokes, but I am also in my 70's and so I blame that somewhat. thanks for your info.Read more

    Disappointed

Rated: 1 stars out of 5
I really wanted to like this recipe, but unfortunatly it was a huge disappointment. I read the other mixed reviews and... decided to give it a try anyways. I've made lots of candy before, so I really don't think the bad results were because of bad technique. The carmel was much too sticky; I ended up with just blobs of hard pumpkin seed carmel. I did spray the baking pan which eliminated that problem. The taste was not all that great either- and you should be careful with your teeth when eating it! Definatly will not try this one again.Read more

Yummy with a Kick ...and a catch!

Rated: 4 stars out of 5
Nice blend of sweet and spicy, if you go for that. Go easy on the pepper though. Not for children unless they go for that... spicy kick. Sandra Lee certainly made it look easy, but suggesting that the pan and spoon be greased may have helped with the clean-up and the of spreading the seeds. But all in all, I'll definately use this recipe over and over, modifying it as a go for ease. It was a real hit with my husband and our friends. Because of the lack of helpful hints and the final spreading of the seeds, I couldn't give the recipe 5 stars.Read more

Spicy and sweet do not mix when it comes to pepper

Rated: 2 stars out of 5
I did exactly what the recipe said to and not only did the seeds not spred but the cayenne pepper made the seeds taste... terrible. No one that i made them for liked them. I think if you omit the pepper it would have been a wonderful recipe.Read more
