Ingredients

  • 1 block (8 ounces) cream cheese (recommended: Philadelphia), softened
  • 1/2 cup sugar
  • 3 tablespoons lime curd (recommended: Dickensons)
  • 6 mini graham cracker crusts (recommended: Keebler)
  • Whipped topping (recommended: Cool Whip)
  • Sugared lime slices, for garnish

Directions

In a medium mixing bowl, beat the cream cheese and sugar with an electric mixer until creamy. Beat in the lime curd on low speed until just combined.

Spoon the mixture into the graham cracker crusts. Place on a small baking sheet in the freezer for 10 minutes. Serve with a dollop of whipped topping and 1/4 of a slice of lime that has been sprinkled with sugar.

    I used half regular cream cheese and half reduced-fat and it still had a wonderfully creamy texture. I found lime curd in... the baking and spices aisle. I've made this twice now and it's one of my boyfriend's favorite desserts. He's a big fan of key lime pie and loves this.     you can find lime curd at http://www.curdelicious.com/ I've also made this with strawberry jam and added a strawberry on... top, the creme cheese turned a soft pink color.....way too cute and delicious. The pastel green with a lemon wedge and the soft pink with strawberry on top for Easter two days ago were a huge hit.Read more
