Oatmeal Date Spice Cookies

Ingredients

1 (18.25-ounce) box classic yellow cake mix

12 tablespoons (1 1/2 sticks) butter, melted

1/3 cup all-purpose flour

2 eggs

2 tablespoons pumpkin pie spice

2 teaspoons pure vanilla extract

1 cup quick-cooking oats

1 cup walnuts, chopped and toasted

1 cup chopped dates

Directions

  1. Preheat oven to 375 degrees F.
  2. Combine cake mix, melted butter, flour, eggs, pumpkin pie spice, and vanilla in large bowl. Beat with a hand mixer for 1 minute, or until well blended. Stir in oats, walnuts and dates. Drop heaping tablespoons of dough onto an ungreased cookie sheet, spacing cookies 2 inches apart. Bake for 10 minutes, or until edges begin to brown. Cool cookies on cookie sheet for 5 minutes and then transfer cookies to a cooling rack or platter.

Made this due to a mound of fresh dates on hand. Not bad! A little sweet when compared to my usual homemade recipe. Added bittersweet chocolate chips, flaked coconut, old fashioned oats, pecans, walnuts, and of course the chopped dates.  Used a scoop to keep them uniform then flattened a bit  with the bottom of a glass. Sprinkled with coarse sea salt prior to baking. Overall were quick and satisfied the chocolate chip cookie need. Would try with Apple pie spice.
