Ingredients

  • 2 pieces leftover barbeque chicken, from Barbeque Chicken recipe, meat removed from bone
  • 2 celery stalks, small dice
  • 1/2 medium red onion, small dice
  • 2 tablespoons mayonnaise
  • 2 tablespoons leftover barbeque sauce, from Barbeque Chicken recipe
  • Salt and freshly ground black pepper
  • 4 hot dogs rolls
  • 4 leaves romaine lettuce

Directions

In a medium bowl mix together the chicken, celery, onion, mayonnaise and barbeque sauce. Season with salt and pepper, to taste.

Divide the chicken salad evenly between the 4 hot dog rolls, top each with a lettuce leaf and serve.

    I made the BBQ chicken last night and put the sauce on after the chicken was cooked through (so as not to contaminate and it was great. Today the BBQ Chicken salad was just as good if not better! The chicken is really spicy so putting it together with everything else cooled it down a little but still left an amazing meal. I can't wait to make this for my friends.

    Maybe I missed something but it 'appeared' that Sandra brushed the raw chicken with the brush then transferred the remaining sauce to a container fro the chicken salad. It should have been transferred to the container BEFORE she brushed the raw chicken.
