Southern-Style Greens with Beans

Ingredients

1 bunch collard greens, center ribs removed and leaves torn into large pieces

1 (15-ounce) can pinto beans

1 (14-ounce) can low-sodium beef broth

1/2 cup frozen chopped onions

1/2 teaspoon red pepper flakes

2 teaspoons red wine vinegar

1/4 cup real bacon pieces

Directions

  1. In a medium saucepan over medium heat, combine all ingredients except beans and cook for 15 minutes stirring occasionally. Add bean and cook for another 2 minutes.

I LOVE this recipe!! We "vegetarian-ized" it by leaving out the bacon and using veggie broth instead of chicken broth, which works perfectly. I have collard greens growing in my garden (and taking over like weeds so this is a delicious way to use them up. After cooking a bit the broth gets almost creamy and buttery, even with no butter or cream used in the recipe, so it's great to serve over rice, plus it's quick and easy.
