Ingredients

  • 8 extra-large eggs
  • 2 tablespoons heavy cream
  • 1 cup grated Gruyere cheese
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 1 small onion, diced
  • 4 small red potatoes, diced
  • 1 cup diced smoked ham or Canadian bacon
  • 1 cup grated Parmigiano-Reggiano, for finishing top
  • 1/4 cup sour cream
  • 1 bunch chives, chopped

Directions

Preheat oven to 400 degrees F.

In a large bowl, whisk together eggs, cream, Gruyere cheese, salt, and pepper until foamy. Melt butter in a cast iron pan over medium heat. Add the onion and potatoes and cook thoroughly. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a spatula so the eggs flow to the bottom of the pan. When the frittata is half set, add the ham.

Transfer the pan to the heated oven. Bake for 10 minutes until puffed and golden. Shower with grated Parmesan and serve garnished with sour cream and chives.

    I made this soon after seeing the show and am making it again for tonight's "breakfast for dinner". The whole family loved... it! I chopped the potatoes a little smaller than suggested, and added whatever cheese I had in the fridge, and it turned out delicious! I agree with Audra that there was a mixed message between the recipe and the show, but I sort of followed what I remembered of the show. (Wiping pan out, adding butter...) Easy and yummy!Read more

    I have made this several times, once adding a pinch of cayenne pepper which was a tasty addition. Another time I omitted the... ham and added chopped, canned, artichokes. I prefer using a springform pan and baking as directed, but without adding the oil needed for the skillet. Read more

    Ok, I haven't made this yet, but just watched Tyler make it on the show...and this recipe is wrong according to him! On the... show, he sauteed the onions and potatos first, then put them on a plate, cleaned the pan with a paper towel stating that you want the pan to be really clean... then he put the butter or some oil in, not sure which and put the eggs in. once the edges pulled away he added all the other ingredients then said to put it in the oven for about 25 mintues. so Tyler...WHICH IS IT!?!?! :)Read more

    Absolutely delicious! This recipe is fun to make and well worth the effort. If gruyere wasn't available, I've substituted ... jarlsberg cheese and it still tastes great. A hearty, rustic, and elegant dish that always impresses when served. A great dish for entertaining since you can make it ahead of time just warm it up before serving. Read more

    This was my first frittata and I was not disappointed! I served this on a "breakfast for dinner" night; my husband and I... both loved it. I did leave out the potatoes and added a little more ham instead. Very savory. Served it with some homemade blueberry muffins. I will definitely be making this again.Read more

    Great! Even with substitutions!!!

    Wow, this is a fun and tasty recipe. I forgot to get gruyere cheese at the store, so believe it or not, used a combination... mozzarella and velveeta cheese I had on hand for the first substitution. Then, for the ham, I had kielbasa on hand and used that instead, medium-diced. All in all, it came out great, and tasty. Also I used the method I saw Tyler use on the show, swirling the oil and dropping the potatoes and onion on top, along with the sausage. Great recipe, thanks Tyler!Read more
