Ingredients
1/2 cup (1 stick) unsalted butter, cold, plus 1/2 cup (1 stick), at room temperature
1/4 cup all-purpose flour
1/2 cup heavy cream
10 ounces dried beef or salami, chopped into 1-inch cubes
2 tablespoons coarse black pepper
1 tablespoon ground coriander
2 tablespoons canola oil
3 large Yukon gold potatoes, sliced
16 slices Texas-style sliced bread
16 slices Muenster cheese
Directions
- Add the flour and 4 tablespoons of the cold butter to a pot over medium heat; stir and combine. Slowly whisk in the cream and bring to a simmer. Add the chopped meat, pepper and coriander and continue to whisk and simmer until it thickens. Turn off the heat.
- Meanwhile, combine the oil and the remaining 4 tablespoons cold butter in a large pan over medium heat; add the potatoes. Fry, flipping occasionally, until golden brown in color. Drain the excess oil and set aside.
- Heat a griddle over medium-high heat. Butter each side of the bread slices with the softened butter and place on the griddle until golden brown. Flip and layer on the Muenster cheese, meat gravy and potatoes. Sandwich together and fry until golden brown and the cheese is melted. Cut in half and serve immediately.
