Ingredients
- 3 tablespoons vegetable oil
- 2 onions, diced
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 3 garlic cloves, crushed
- 2 cups lentils, washed and picked over
- 3 cups water
- 1/2 cup canned crushed pineapple
Directions
Heat the oil in a medium pot over moderate heat. Saute the onions with the salt and pepper until golden, about 10 minutes. Stir in the garlic and lentils and cook 2 minutes, stirring frequently. Pour in the water, bring to a boil, reduce to a simmer and cook, covered, 45 minutes. Stir in the pineapple, remove from the heat and serve.

This recipe was quite easy. However, I used a combination of regular green lentils with red lentils (because that's what I had on hand. As expected the regular lentils retained their texture and the red "melted" into smoothness. The combination resulted in an interesting texture - especially with the pineapple added at the end.

the lentils in this recipe were completely overcooked. when i tried to stir them after simmering for 45 minutes, they mashed up into a paste. the taste was decent, but nothing amazing. i ended up adding the entire can of pineapple, just to get my kids to eat them, because i knew they'd be skeptical of anything with that consistency. even with cooking for less time, i wouldn't try this recipe again.
