You can create up to five timers

Ingredients

  • 4 large eggs
  • 6 tablespoons kosher for Passover vegetable oil
  • 1 cup sugar
  • 1 cup unsalted matzo meal
  • 3 tablespoons potato starch
  • 1/8 teaspoon salt
  • 1 medium Granny Smith apple, peeled, cored, and diced
  • Cinnamon sugar, as needed

Directions

Preheat the oven to 350 degrees F.

In a medium mixing bowl, whisk together the eggs and oil. Add the sugar, matzo, potato starch, and salt and mix until blended. Stir in the apples.

Spray a 2 1/2-inch by 3 1/4-inch muffin tin with non-stick spray. Fill 3/4 full with the batter and dust with the cinnamon sugar. Bake until the tops spring back when pressed, about 15 to 18 minutes.

Cool on a rack and remove from the tin when they are at room temperature.

Note: If you are concerned if the oils or other ingredients in these recipes are suitable for Passover, seek non-dairy substitutes or ingredients that are certified kosher for Passover.

    I found that these tasted better the day after they were made. I warmed one up in the microwave for about 10 seconds and it was perfect with my cup of coffee. Letting them sit removes the "matzo meal" taste and makes them more like a muffin. I didn't think about the mini-muffin tins, but will try that next time. Really nice take for a different Passover sweet.

    Very good recipe. Very easy my daughter even made it. The second time we made it we used the leftover charoset instead of apples. Turn out great and gave it a little different flavor.

    Most of us have a scaled down kitchen on passover as every utensil can't be kashered for chag. Perhaps some tips on how to do this with very basic equipment would be helpful (ie: no muffin tins, ice cream scoops, etc. Sounds like a great recipe :(
