Ingredients
- 1 12-ounce box vanilla wafers
- 1/2 cup pine nuts
- 3/4 cup unsalted butter (1 1/2 sticks), melted
- 1/3 cup tequila
- 1/2 cup fresh lime juice
- 5 large egg yolks, plus 2 egg whites
- 1 14-ounce can sweetened condensed milk
- 1 tablespoon sugar
Directions
Preheat the oven to 350 degrees. Pulse the wafers and pine nuts in a food processor until well ground up. Add the butter and blend until evenly mixed. Set aside 1/4 cup of crumbs. Press the remaining crumb mixture evenly into a 9-by-13 shallow baking pan; bake until golden brown, 15 to 18 minutes. Cool.
In a medium bowl, thoroughly whisk together the tequila, lime juice, egg yolks and condensed milk.
In another medium bowl, beat the egg whites and sugar with an electric mixer until they hold soft peaks. Gently fold the egg whites into the tequila mixture. Spread the filling evenly over the crust and bake for 25 minutes; cool. Sprinkle the reserved crumbs on top. Chill in the fridge for 2 hours or overnight before cutting into bars.

I am not a baker; makes me nervous. I'm usually the hostess so I like to have stuff that other people will enjoy. Not really a big fan of “eggy stuff” but I saw these and thought they would be the perfect dish for a super bowl party. I didn't start on it until after church super bowl Sunday; I only had 5 hours to get this done. I didn't put them in the fridge until 3:30. I took them out and cut into bars at 5:45. People said they could smell the liquor. They said they were good and strong (of course I had put an extra shot or two in. I thought they were pretty good. I put the left overs in the fridge. Next day while working from home I decide to break off a piece of one just b/c I wanted something sweet. Man those things are great! I will definitely make them again! Mom (1st grade teacher's aide said she took hers to work. Said she and teacher would eat them when the kids started getting on their nerves (end of the day.

Used 100% Agave Anejo Tequila. Also sprayed the dish with oil before cooking the crust. Used fresh squeezed lime juice. Otherwise followed all instructions. The bars came out great.
