Ingredients
- 2 cups leftover shredded turkey
- 1 large jar salsa
- 1 cup canned black beans, drained and rinsed
- 2 scallions sliced
- 6 flour tortillas
- 3 cups grated Pepper Jack cheese
Directions
Preheat oven to 350 degrees. In a large bowl combine turkey with 2/3 cup salsa, black beans and scallions. Spread out some salsa in bottom of baking dish. Place about 1/2 cup of turkey mixture And a bit of cheese on a flour tortilla, roll up and place in baking dish and continue process. Top with salsa and sprinkle with remaining cheese. Bake for 30 minutes or until bubbly

I love a quick solution to dinner. This is easy to put together and is great with left over smoked turkey. I add a red salsa inside and top the enchiladas with a can of Hatch green chile enchilada sauce! yum

How can a recipe on this site not even list one type of seasoning? What makes this recipe even remotely like enchiladas? The tortillas?

I made this for a family party and received many compliments...it was easy to make. I made this ahead of time and reheated when guests arrived.
