Turkey Pot Pie

Ingredients

2 tablespoons butter

1 onion, chopped

2 stalks celery, chopped

3 carrots, chopped

4 tablespoons flour

4 cups chicken or turkey stock

2 potatoes, peeled and diced

2 cups shredded turkey

2 tablespoons chopped parsley

1/2 cup frozen peas, thawed

1 prepared pie crust

1 egg, lightly beaten

Directions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in saucepan and cook chopped onion until tender. Stir in celery and carrots and cook for 2 minutes. Stir in flour and cook for 2 minutes. Add chicken stock and bring to a simmer. Add potatoes and simmer until tender. Stir in turkey, parsley and peas. Pour mixture into casserole. Top with pie crust and brush with egg. Bake for 30 minutes until crust is golden.

After reading some reviews I only added 3 cups of liquid vs the 4: 1 cup of good turkey stock and 2 cups of leftover gravy. I added a healthy splash of heavy cream and I’m glad I did. If I hadn’t also added the gravy it would have been far too liquidy. I must say that even with adding s&p (not in recipe?), chopped thyme, sage and 1/2 tsp of poultry seasoning it still felt like it was missing something. How can a recipe like this not have any seasoning ingredients whatsoever? The major omission I tasted was salt. It needed a ton. Make sure you taste your filling before it goes in the oven!
