Ingredients

  • 1/2 cup unsalted butter
  • 4 onions, sliced
  • 2 garlic cloves, chopped
  • 2 bay leaves
  • 2 fresh thyme sprigs
  • Kosher salt and freshly ground black pepper
  • 1 cup red wine, about 1/2 bottle
  • 3 heaping tablespoons all-purpose flour
  • 2 quarts beef broth
  • 1 baguette, sliced
  • 1/2 pound grated Gruyere

Directions

Melt the stick of butter in a large pot over medium heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized, about 25 minutes. Add the wine, bring to a boil, reduce the heat and simmer until the wine has evaporated and the onions are dry, about 5 minutes. Discard the bay leaves and thyme sprigs. Dust the onions with the flour and give them a stir. Turn the heat down to medium low so the flour doesn't burn, and cook for 10 minutes to cook out the raw flour taste. Now add the beef broth, bring the soup back to a simmer, and cook for 10 minutes. Season, to taste, with salt and pepper.

When you're ready to eat, preheat the broiler. Arrange the baguette slices on a baking sheet in a single layer. Sprinkle the slices with the Gruyere and broil until bubbly and golden brown, 3 to 5 minutes.

Ladle the soup in bowls and float several of the Gruyere croutons on top.

Alternative method: Ladle the soup into bowls, top each with 2 slices of bread and top with cheese. Put the bowls into the oven to toast the bread and melt the cheese.

    This soup was excellent! I actually think it tasted better the next day when I reheated it for lunch. My 9 yr old daughter... who delcares she HATES onions gobbled this soup up. She not only had it for dinner but she requested it in her lunch box the next day! Thank you for such a great FO soup recipe.Read more

    While my intention was to follow the recipe exactly, I ended up having to deviate slightly - but still had great results. ... Did not have any red wine in the house so I substituted white wine and brandy. Soup has great flavor fresh, but flavor deepend overnight making left overs even better. Tip: I was bringing this to work for a soup lunch where it was to be served in styrofoam bowls and eaten with plastic spoons - so I had to figure out a way to make the traditional crusty crouton with bubbly cheese work: I scored the baguette slices into 1" sections before placing the cheese on top, then used the broil setting of a toaster oven to toast them before dropping into the soup. Having the bread scored allowed you to break thru the crouton with ease and I must way was kind of nice..even when using real bowl and silverware ; ).Read more

    I've made this soup about4 times now, and every time it gets better. As mentioned time and again, the cooking time is almost... doubled but well worth it. I've tried it with cab, zin and syrah. The Syrah is the best in my opinion. Also toasting the baguette then broiling it with the soup and cheese seemed to work the best (helps the bread hold up to the soup so you have a bit more texture.) I am a hugh TF fan and just about everything I have had by his is great, I get asked how I made this ever time i serve it, also have very little left overs. Tonight I'm making it for myself, so i can hae them all. ;)Read more
