To peel the plantains, cut off ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.

Heat 4 tablespoons butter in a large skillet and place over medium low heat (plantains have a high sugar content and will burn if the heat is too high.) Fry the plantains in a single layer, until golden on the bottom then turn over with a spatula. Add the cinnamon, vanilla, and sugar and let cook a few more seconds, just to begin caramelizing the sugar.

Just before serving, melt remaining tablespoon of butter to finish the sauce. Serve immediately.

    Incredible taste. Wanna try something really crazy with these? I was trying out a Ropa Viejas recipe and remembered a dish I had in Manhattan a few years back. It was put together as a stacked dish, like layering/packing in a tin can and then pulling the can up/off. Based on my memory, here goes - seasoned black beans (try jalapeno/onion/garlic/smoked salt/bayleaf/tomato, rice, Ropa shredded beef, Ropa sauce and topped with these plantains (minus the cinnamon. It sounds like a crazy combination, but honestly the combination makes an incredible dish.

    Excellent recipe! I believe sweet plantains should be sweet, thus the name and this recipe was a perfect representation. My family thoroughly enjoyed these!

    Sweet plantains are delicious! But they do not need sugar, cinnamon , butter or vanilla extract, just fry them with nothing else added and sprinkle with salt and garlic powder while they are still hot.
