This traditional Nicaraguan Guacamole is delicious on its own, served on the side of classic Nicaraguan dishes like Gallo Pinto or Chancho Frito or served with fried Tostones for a delicious appetizer. It’s a simple recipe flavored with plenty of fresh lime juice, onion and mixed with hard-boiled eggs which might sound odd but works so well together!

Pancit Palabok
This beloved Filipino dish features noodles bathed in a rich pork and shrimp sauce and finished with a variety of colorful toppings. While sticking closely to most traditions of the dish, our version has a few tweaks. Instead of the usual rice vermicelli noodles, mung bean threads bring a delicate springiness that the sauce without turning soggy for satisfying chew and lightness in every bite. The rich annatto-hued gravy built from shrimp shells, pork and aromatics blends beautifully with the noodles for savory depth. For toppings, the classic hard-boiled eggs and crispy pork rinds are joined by smoked trout or bonito flakes, a replacement for the more traditional tinapa flakes that can be difficult to find outside the Philippines. The result is a vibrant dish that’s both nostalgic and practical — ideal for everyday cooking, festive gatherings or introducing Filipino comfort food to a new audience.
