Ingredients

  • 1 store-bought rotisserie chicken
  • 1/4 cup hot sauce (recommended: Frank's Red Hot)
  • 1 teaspoon ground black pepper
  • 1 3/4 cups sharp Cheddar
  • 1/4 cup freshly sliced scallions
  • 1 cups all-purpose flour
  • 3 eggs, lightly beaten
  • 2 cups panko bread crumbs
  • Vegetable oil, for frying

Blue Cheese Dip:

  • 1 1/2 cups mayonnaise
  • 1/2 cup packed blue cheese, broken up
  • 1/2 teaspoon hot sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 lemon, juiced
  • 1 teaspoon chopped garlic

Directions

Have oil heated to 350 degrees F.

Pick the meat from the chicken and discard the skin. Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and scallions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.

Place the flour, eggs, and bread crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.

When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Remove the chicken to paper towel lined plate to drain the excess oil.

To make the sauce, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

    I made these for the Superbowl last year and they were requested again this year. I'm pretty certain they're going to be a... Superbowl staple every year. I use 1/2 c. Louisiana Supreme Wing Sauce instead of hot sauce and even my 11 year old loves them. They are really easy, but a little messy to cook. The panko breading makes them unbelievably crunchy. Read more

    Needed A More ot Sauce

    Made these for a Superbowl party yesterday. I am not a person that likes things really hot and this recipe DEFINATELY needed... double the hot sauce and could have used more! I purchased Pete's Buffalo Sauce as was recommended in the reviews and I followed the recipe until my hubby and I tasted the chicken mixture before rolling into balls. I added more and more sauce by the Tbls. until I had put in another 1/4 C. which made it a full 1/2 C. of hot sauce! Maybe I should have used the Frank's Hot Sauce as the recipe called for. Will try that next time. I also minced my chicken by hand (don't have processor) as I read in the reviews and I found that it was MUCH easier to roll the chicken mixture into balls. I used a mild Blue Cheese as recommended in the reviews and I should have used a stronger one because I felt the mayo was the primary flavor in the dip. I personaly don't like mayo dips so after following the recipe as written and tasting it, I added about 1/4 C. sour cream and another 1/2 C. Blue Cheese crumbles to the dip.     My family loves Big Daddy House. Aaron reminds me of my father who was the cook in our home being a widower raising two... little girls. Just like my dad, he was heavy on the black pepper. A lot of cooks I have notice is getting away from the black pepper onto red pepper flakes it is not the same. Black pepper is a real man season if you are a whimp get away from Big Daddy he is heavy handed. That is what I love about him and as far as this recipe my only complaint is as soon as they are out the fryer they start disappearing. We love these chicken balls and you just cant stop eating them and there is never any leftovers. Those who have complaints are the ones who are really not home cooks. After making the first batch I knew what flavors I wanted and how much hot sauce and sauteed onions I needed to take it to the next level. Superbowl look out! Do your thang Big Daddy! Read more
