Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1 1/4 cup shredded sharp cheddar cheese
  • 1/3 cup blue cheese dressing
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon fresh ground black pepper
  • Flavor Pack from Ramen
  • 6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
  • 12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
  • 1 package chicken flavored Ramen noodles, broken up

Directions

Preheat oven to 350 degrees F.

In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.

    I used low-fat/ fat free everything (except the cheese, because if you say low-fat cheese doesn't taste like rubber, your... lying) It came out amazing. My Husband loathes vegetables and he loved this. Just be sure to barley cook the broccoli or else it will turn to baby-food when baked. Again, this was a huge hit at our thanksgiving table. Read more

    So I sent my daughter to the store to save time and gave her a list and this recipe. She forgot the plain yogurt and... purchased two of largest frozen bags of broccoli I have ever seen (teenagers). No time to go to the store myself I decided to go with what I had. I substituted light sour cream for yogurt and made sure the frozen broccoli was close to being defrosted when I put together the ingredients. I brought this dish to Thanksgiving and was surprised how many people commented they really liked it. I was worried after baking the frozen broccoli it could possibly make the dish watery, but it did not it was perfect and the broccoli was slightly crisp, just the way I like it.     This easy to make recipe really makes a great dish. I made this recipe for the first time the other day and it is a fantastic... dish. I made it exactly to the directions and will be making this dish quite frequently. The only change I may make is to use extra sharp cheddar cheese instead of sharp chedder. I would also propose adding a bit of the ramen noodles dusting the top of the casserole when you have the rest of the mix in your baking dish. Durring the final 15 minutes of cooking with the lid off, I would also sprinkle about 1/4 cup of grated sharp or extra sharp cheddar cheese across the top to enhance presentation. Don't put too much cheese on top, you do not want a layer, you just want enough to give it bit of color for final presentation for the meal. Excellent recipe!Read more
