Ingredients
- 4 ounces granulated sugar
- 1 teaspoon ground children's Vitamin C
- 1/2 teaspoon smoked paprika
- 1 pound peeled and pitted fresh peaches, cut into 1/2-inch thick slices
Directions
Place the sugar, Vitamin C and paprika into a 1-gallon zip-top bag, seal and shake to combine. Add the peaches and toss to coat well. Lay the bag flat on a counter and using a straw, suck out any remaining air in the bag. Return to the freezer.

I use the peaches for smoothies. I thought this worked well for freezing my peaches and just went to the farmers market to get more. I tried one bag earlier this week and thought the color, flavor and texture was great. (By the way, seconds work great for this process. I bought a big basket for just $2.00 and saved a ton of money. I am going to reduce the amount of sugar for my next batch since this creates a little more syrup than I need. That's why I gave 4 instead of 5 stars.
I don't plan to use the peaches for pie so that's not an issue for me but they seem to me to be about the same consistency as any other frozen peaches and I don't know why you couldn't use them.
As far as the chewables, I found unflavored vitamin C tablets for adults and used those. My peaches held their color and did not seem to have an odd color as mentioned in another post.
Thanks for the process, Alton. I'm so happy I can freeze the peaches.

Can you substitute citric acid for the children's vitamin c? What would the amounts be?

I froze a couple of pounds of peaches per Alton Brown's recipe. How do I use them in a recipe such as pie or cobbler? How do I adjust the sugar since there is 1/4 # sugar in the peaches.
