Ingredients

  • 4 large leeks, dark green sections removed
  • 2 tablespoons bacon drippings
  • Heavy pinch kosher salt
  • 1 tablespoon balsamic vinegar
  • Crumbled bacon and goat cheese, as an accompaniment, optional

Directions

Preheat grill to high. Cut each leek in half lengthwise and rinse thoroughly to remove all dirt and sand. Pat dry. Brush the cut side of each leek half with the bacon drippings and sprinkle with kosher salt. Grill over direct, high heat, cut side down, with lid closed, approximately 6 to 7 minutes or until grill marks appear. Remove the leeks to a sheet of aluminum foil and lay cut side up. Brush the leeks with balsamic vinegar. Reassemble the leek halves together, wrap tightly in foil, and set back on the grill away from direct heat for 10 to 12 minutes.

Remove the leeks from the foil and serve immediately, as is or with crumbled bacon and goat cheese.

    Follow the recipe and you will have excellent results. I recommend removing the two outer layers of the leeks to get rid of... the outside tough part.Read more

    Great alternative with some exceptions

    After tryin the original recipes and working on a few variations to elimate the toughness of the outside of the leek i'll say... it is a great alternative to the traditional grilled vegetables. Only exception is if I were to serve to guests, I would only serve the more tender inner sections of the leeks. The outside leaves tend to be tough and stringy. Also, don't be shy trimming the top and bottom, and look for above average size leeks.Read more

    I don't eat bacon, so I used olive oil. I also think that I got too much balsamic on the leeks. But I did cook them for the... proper amount of time, and it should be noted in the recipe that the outer segments of the leek will be simply inedible. The inside was nice, but the outside really ruined the experience. I probably should have figured this out before setting the plate on the table, but I was in a rush and only did what the recipe said regarding presentation - that is, nothing.Read more
