Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 small red onion, sliced into thin rounds
  • 16 ounces medium-diced melon, approximately 2 cups
  • 1 tablespoon fresh basil, cut into chiffonade
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons red wine vinegar
  • 2 ounces feta cheese, crumbled
  • 1 tablespoon pine nuts, toasted

Directions

Heat a large saute pan or wok over high heat. Once the pan is hot, add the olive oil, followed by the onion, and saute for 1 to 2 minutes, moving the pan continually. Add the melon and saute for another 1 to 2 minutes or until the melon starts to take on color. Add the basil, salt, and pepper and continue to cook for another minute. Add the vinegar to the pan and toss to combine. Pour mixture onto a serving platter, sprinkle with the cheese and pine nuts, and serve immediately.

    Ive had Alton's recipe before, but it is important to note that Muskmelons and Cantaloupes are not the same thing. Ive... worked in a local North East supermarket for nine years, and I know a thing or two about produce. Muskmelons are like cantaloupes but have a "musky" taste and smell (sometimes the smell is overly "musky" and not enjoyable) and the skin is very soft due to the sweetness of the flesh. A Cantaloupe or "lope" is the normal type of orange fleshed melon that everyone consumes.     This recipe sounded too bizarre when AB presented it on a recent show but my 5 year old (who is enthralled with "Good Eats")... gamely wanted to make it. Used 1/2 musk melon and 1/2 watermelon. Fresh basil and pan toasting the pine nuts are absolutely essential. Used a terrific French sheep's milk feta - complex and not too salty. Serve and eat it straight away - doesn't really "keep". Looking forward to making this salad with al fresco summer meals.Read more

    i made this tonight for my bride & I, with some reserve I admitt, but let me asure you , A.B. has done it this time. It took... a little time , I admitt, but beleive me its worth it. I used "cantalope" & Honeydew, came out sweet & delisious. I used fresh basil and I think that helped. i'll make this for company this weekend.Read more

    Different way to eat melon

    This was a very interesting and different way to eat melon - the feta and pine nuts are nice in combination with the melon,... and the red onion added some sweetness to my not-so-sweet-to-begin-with melon. I tried this with cantaloupe (or, as AB pointed, out, musk melon) and liked it, but I think it might be better with 1/2 and 1/2 musk melon and honeydew as he suggested in the show. Also, I substituted dry basil (can't really get fresh during a January snowstorm) but I bet it would be even better with the basil.Read more
