Chop and fry bacon; combine the drippings with cider vinegar, dijon mustard, olive oil, salt and pepper. Toss with mesclun greens; top with the bacon and a poached egg.
This salad reminds me of the French Country Salad I enjoyed while I was in France.....it's quick, easy, and has protein with the bacon and poached egg. A healthy way to eat bacon? How good is that?

I luv this salad. I used iceburg,roman,radicchio,and roman lettuce with spinach also. Dee-lish!!
