Vegan “Egg” Salad

This healthy vegan egg salad recipe uses tofu in two ways: First, to make a creamy delicious “mayo” that holds the salad together with bright and fresh flavors, then cut into small cubes to resemble chopped egg whites. We use a shelf-stable extra-firm silken tofu (instead of refrigerated silken tofu), because it has an ideal texture for both preparations. Enjoy this “egg” salad, which brings14 grams of protein, on toasted sliced vegan bread or lettuce leaves, or simply on its own.

  1. For the tofu mayo: Blend the tofu, lemon juice, agave, vinegar, garlic powder, mustard, nutritional yeast and salt in a mini food processor, stopping and scraping down the sides with a spatula as needed, until very smooth. Transfer to a large bowl.
  2. For the tofu egg salad: Add the cubed tofu, dill, lemon juice, mustard, salt, pepper, paprika, turmeric, celery and scallions to the bowl with the tofu mayo and mix gently until evenly combined. Cover and refrigerate for about 30 minutes to meld the flavor.
