Ingredients

  • 1 1/2 pounds young kale, stems and leaves coarsely chopped
  • 3 tablespoons olive oil
  • 2 cloves garlic, finely sliced
  • 1/2 cup vegetable stock or water
  • Salt and pepper
  • 2 tablespoons red wine vinegar

Directions

Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.

    I added two whole dried chili peppers crushed by hand with extra garlic and one small onion in the oil before adding kale and... a homeade vegetable broth.     This was my first time making kale, and I was sure I would mess it up. I made it with water instead of stock because we were... out of stock. It was VERY easy to make and DELICIOUS! I chopped up half an onion and put it in as well while it was steaming and it added nice flavor. I also added about 2 TB unflavored goat cheese before serving and it added a lot of depth and made it a more satisfying side dish. Read more

    This recipe is delicious! Kale is milder in flavor than some other greens I use. I added some sliced onion with the garlic... before putting the greens, which caramelized and added sweetness. At the end I tossed on some toasted cashews for a little crunch. I will definitely enjoy this again soon.Read more

    I've never had Kale before, it's one of the few foods I'd never tried.     I thought of kale as something that needed a long cooking time and was best in soup. This recipe is quick easy and... delicious. I do two big bunches at a time in my biggest pan. The leftover cooked kale keeps well and reheats for another meal. When I do two bunches I use more broth then the recipe calls for and steam it for longer then the recommended 5 minutes to allow for the added volume.Read more
