Ingredients
- 1 pound soba noodles
- 1/4 cup soy sauce
- 4 drops hot pepper oil
- 2 tablespoons white vinegar
- 1/2 teaspoon finely minced fresh ginger
- 2 tablespoons sesame oil
- 1 large seedless cucumber, quartered and diced
- Black sesame seeds
Directions
Cook the noodles in a large pot of boiling water until tender. Drain well. Whisk together the soy sauce, hot pepper oil, vinegar, ginger and sesame oil and toss with the warm noodles. Add the cucumber and top with the sesame seeds. Serve at room temperature

I have made this easy dish several times, and it is always a crowd pleaser. To keep it from being bland, I use less noodles than the recipe calls for - I use either 8 oz or 12 oz, depending on the size of the packaging. To jazz it up, I add some sauteed porcini or shiitake mushrooms with a dash of soy sauce.

I was very disappointed with this recipe. The sauce was bland, slightly salty, yuck. I expected something a little tangy, a little sweet, a little salty but got yuck.
