Ingredients

  • 12 ounces cheese tortellini
  • 1/4 cup reserved pasta cooking liquid
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 pound proscuitto, sliced into thin strips
  • 1 cup heavy cream
  • 1/4 cup Parmesan
  • 3/4 cup peas
  • Salt and pepper

Directions

Cook tortellini according to package directions. Melt butter in skillet and cook garlic for 1 minute. Add Prosciutto and cook for 2 minutes. Add heavy cream and bring to a simmer. Cook until cream is reduced by half. Stir in 1/4 cup Parmesan and peas. Stir in reserved cooking liquid and tortellini and toss to coat.

    Love this recipe. I use it for weeknight meals and its always good. Only caveat - takes 20 minutes at least to simmer down the sauce. GOOD recipe!

    This is a great go to recipe that can be simple when you need to do groceries, or doctored up with whatever great ingredients you have on hand. I do make some alterations for cost and health. For everyday eating, instead of heavy cream, I blend 2 tbsp butter, 2 tbsp flour and 1 cup skim milk. Heat until thickened. Double as needed. This is a basic white sauce, without the calories of heavy cream. I substitute the bacon for proscuitto, for cost and convenience, because I always have it in the freezer. Also this works with ANY pasta, so use whatever is in the pantry. There are no herbs in this recipe and I like to add a little thyme, parsley and lemon zest, which really wakes up the flavours. Club Hose brand lemon & herbs from the spice aisle works great too. Like others, I have added any type of onion, mushrooms, peppers, asparagus, spinach, etc. , depending on whats in the fridge. Be creative and enjoy!
