Ingredients
- 2 pounds fresh spinach leaves, washed thoroughly but not dried too much
- 1 cup heavy cream
- Grey salt and freshly ground black pepper
Directions
In a large pot with a lid, place washed spinach, and cook covered over medium heat, until spinach wilts.
Drain and squeeze out all excess water. Be sure all moisture is removed from cooked spinach. Chop, if desired, and set aside.
In heavy bottomed pot, over low heat, bring cream to a simmer until reduced by half, about 4 minutes. Add spinach and season with salt and pepper, to taste. Allow creamed spinach to infuse flavors for just 1 to 2 minutes and it's ready to eat.

This looks plain to me.I have made the one by Sunny Anderson,its so much better!!!! I need to make it again.

Blech. No flavor! 2# fresh spinach-sauteed' w/ garlic, salt & pepper. Drain liquid. Mix room temp 1/2 c lite sour cream, 1/2 c neufchatel cream cheese, 1 T horseradish, 1/4 tsp nutmeg. Mix into sauteed spinach. Delish.

I've never liked creamed spinach and we all loved this. So simple. I didn't buy enough spinach and that was my only regret. Even our teenager ate it. Yum!
