Ingredients
- 2 cups all purpose flour
- 1/2 teaspoon coarse salt
- 1 tablespoon baking powder
- 5 tablespoons unsalted butter, cold, cut into ? inch pieces
- 1 16-oz. container low fat cottage cheese
Directions
Preheat oven to 450. In a large bowl or the bowl place flour, salt and baking powder. Stir until combined. Add butter and mix until it?s the size of small peas. Add the cottage cheese and stir until just combined.
Using a large soupspoon, drop onto a non-stick cookie sheet. Bake until golden, about 12-15 minutes. Serve immediately.

I just made this and thought it was a great recipe! I also registered this username just to send my input. It was perfectly crisp on the outside and chewy and moist on the inside. Great recipe!

This biscuit is amazing! I would have made these for my kids when they were little if I had this recipe back then. It is a high protein biscuit and I can serve these without feeling guilty about feeding the kids pure carbs. It is great served with jam and does not even need any additional butter. I now make these often and everyone who has tasted these ask for the recipe.
Tip: I use a 2 1/4 inch round cookie cutter and lightly pack the loose dough into the cookie cutter. It makes shaping the biscuits so much easier. At this size it makes a dozen.

I actually registered just to review this recipe. The outside is perfectly crisp with a chewy, moist inside. You can taste the cottage cheese just a little - great interesting twist on a biscuit. Quick to throw together, and I think some garlic and/or fresh herbs would kick them up another notch. Will certainly make again.
