Warm, flaky biscuits are a versatile quick-bread side that can work on almost any dinner table. This version replaces milk or buttermilk with low-fat cottage cheese, for a bit of tang and added protein, and the typical butter has been replaced by olive oil. Stir in fresh dill and scallions for a pop of green, herby freshness.

Directions

  1. Whisk together 1 1/4 cups flour, 1 tablespoon sugar, 1 1/2 teaspoons baking powder, 3/4 teaspoon each kosher salt and pepper and 1/4 teaspoon baking soda. Mix in 3/4 cup low-fat cottage cheese, 6 tablespoons olive oil, 1 egg and 2 tablespoons each chopped scallions and dill to make a crumbly dough. Knead a few times and form into a 4-by-8-inch rectangle; cut into 8 biscuits. Bake on an unlined baking sheet at 400 degrees F until golden, 17 to 20 minutes.
