Ingredients

  • 6 Granny Smith apples, peeled and cored
  • 1/2 cup sugar
  • 2 tablespoons dry sherry
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1 recipe Pate Sucree, recipe follows
  • 2 tablespoons butter, cut into bits
  • 2 tablespoons heavy cream, to brush crust
  • 1 tablespoon sugar, to sprinkle on crust

Directions

Preheat the oven to 350 degrees F.

Cut each apple into 12 segments and put in a large mixing bowl. Add the sugar, sherry and lemon juice and toss to coat well. Add the cinnamon, allspice, ginger and nutmeg and mix well. Set aside to let the flavors blend for 15 minutes.

On a well floured surface, roll the dough out to a 15-inch circle. Transfer to a baking sheet and mound the apples in the center, making sure to leave a generous 2-inch border. Dot the apples with the 2 tablespoons of butter and fold the dough border up around the apples. (It won't meet in the center.) Brush the dough with the heavy cream and sprinkle with the sugar. Place in the bottom third of the oven for 30 minutes. After 30 minutes, transfer to the top third of the oven for an additional 30 minutes. Remove and let cool for 15 minutes before serving.

Pate Sucree:

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 7 tablespoons butter, chilled and cut into bits
  • 3 tablespoons ice water

Put the flour, sugar and salt into the bowl of a food processor. Pulse to combine. Add the butter and pulse until the mixture resembles coarse crumbs. With the processor running add the water 1 tablespoon at a time until a dough just begins to form. Turn out onto a lightly floured surface and pat into a disk. Wrap in plastic wrap and refrigerate for at least 20 minutes.

    Fairly good

Rated: 4 stars out of 5
This was very simple and pretty good. I would prefer for it to be a little sweeter. My young adult children loved it and said... it doesn't need to be any sweeter. Next time I'll try it with a little more sugar in the crust and in the filling. The presentation was beautiful. My husband said it taste kinda good. Hmmm Thank you muchRead more

    So simple and so good!

Rated: 5 stars out of 5
I had one Pillsbury refrigerator crust ledt over from the holidays and I used it for this receipe and it was very tasty and... worked great. I forgot to add the sherry, didn't add the extra liquid from the bottom of the bowl and used only 4 JanaGold apples and will DEFINITELY make this again. JanaGold is a cooking apple that is a bit sweeter than Granny Smith. Serve with some whip topping and you will be a winner with your family or guests!Read more

This recipe was great! I really enjoyed the crust, but i doubled the dough to make two, there were plenty of apples for both.... I also mixed in a little of the liquid from the bowl into the heavy cream before brushing it on, and that gave the crust a little extra flavor.VERRY GOOD!!!!!!Read more
