Ingredients

  • 1 1/2 tablespoons vegetable oil, divided
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 16 large shrimp, peeled and deveined
  • 1 egg, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon red crushed pepper flakes
  • 1 teaspoon brown sugar
  • 7 ounces rice noodles, soaked in warm water for 10 to 15 minutes then drained
  • 1/2 cup bean sprouts
  • 3 scallions, sliced
  • 1 cup freshly chopped cilantro leaves
  • 1 lime, zested and juiced

Directions

Heat 1 tablespoon of the oil in a wok or a large frying pan. Add the garlic and ginger, and saute until golden brown. Add the shrimp and cook for 1 to 2 minutes until pink, tossing from time to time. Remove and set aside in a bowl.

Heat 1/2 tablespoon of oil in the same pan and add the eggs. Stir to scramble the egg into small pieces, remove and set aside with the shrimp.

Heat the remaining oil in the pan and add the soy sauce, fish sauce, rice wine, red pepper flakes, and brown sugar. Stir briefly, add the drained noodles, and cook for 5 minutes.

Add the bean sprouts, chopped scallions, and cilantro. Mix well and continue to cook until noodles are heated through. Season, if necessary, with a little more soy sauce or fish sauce, sprinkle in lime zest and juice, and serve while hot!

    Loved this recipe!

This was so super easy. Amazing flavor! I haven't used the rice noodles before... a little rubbery... I may experiment... with angel hair or try to make the rice noodles brown a little separately. I repeat - flavor was great!! I added some chicken to the dish... will absolutely make again. Thank you! My Husband's Favorite New Dish!!

Rated: 5 stars out of 5
I have made this recipe several times but just sat down to comment on it. I make the recipe as is except i do not add any... extra soy sauce at the end. I use rice sticks which I cut in half because they are so long but works well. Evertyime I make this my husband thinks he's getting a special treat and I don't feel like I'm blowing my healthy cooking too much. Thanks Danny for the easy and tastey dish.Read more

    Yummy!

I have read the reviews and have to agree with those who loved this recipe. I thought it was great. I loved the zing of lime... and the freshness of the cilantro. The red pepper flakes give it a little heat. There have been several who have complained about this recipe being too salty. I would suggest getting the real soy sauce. Although the sodium levels are similar, the composition of this soy sauce and additional wheat flavor, make this soy taste less salty. Add water to the noodles if they don't cook fast enough or haven't soaked long enough. It helps them cook up better. This has become a family favorite. Even my 3 year old loved it.Read more

    Really Tasty!!

Rated: 5 stars out of 5
I have made these recipe three times with a few modifications and love it. Here are my modifications 1. used chicken... instead of shrimp. 2. used regular white vinegar. I did not have the other. 3. did not use lime. 4. Increased the amount of sauce (2x) and bean sprouts. I have used various sizes of rice noodles and I just follow the directions on that particular pack of noodles. After the changes, I think that it is an excellent recipe. Read more

    good but not great

Rated: 4 stars out of 5
my husband liked this better than I did. Next time I will add an extra tbsp of brown sugar (already added 1 extra per other... suggestions) and I will decrease the amount of lime by 25-50%. I didn't find it too salty until I added soy sauce at the end as suggested. If you don't add any extra it shouldn't be too salty. Over all it was good, but needs a little tweaking.Read more
