Ingredients

  • Cooking spray
  • 1 cup quick cooking rolled oats
  • 1/2 cup raw unsalted sunflower seeds
  • 1/2 cup toasted wheat germ
  • 1/4 cup whole-wheat pastry flour
  • 1/2 cup dried apricots
  • 1/2 cup raw almonds
  • 1/2 cup raisins
  • 1/2 cup pitted dried dates
  • 1/2 cup powdered nonfat dry milk
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup pure maple syrup
  • 2 large eggs

Directions

Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.

Place all ingredients except the syrup and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.

Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.

    Skiiers Treat

Rated: 5 stars out of 5
I made these for our recent ski trip (usually we bring along clif or luna bars) and they were a huge hit with the whole... group. One day when we decided to take a late lunch, we all had one mid-morning and none of us could believe how they filled us up and kept us going. And I've never had an energy bar that tasted better. super tasty and a cost saver!

Rated: 5 stars out of 5
Super tasty; I used dried cherries and dried cranberries instead of raisins. I also added nutmeg, allspice, and ginger in... addition to the cinnamon. Lastly I added two, very ripe, bananas to the mix-this gave a nice texture and a slight banana flavor (not too much!). Next time I will fold in some chopped walnuts after I process the whole mixture. This saves a lot of money compared to buying clif bars!Read more

    Friends love them

Rated: 5 stars out of 5
Friends really liked them and want the recipe. For those worried about left over ingredients, you can go to a store where... they sell things by bulk and get the exact amounts you need for a fraction of the cost of buying a whole package. I like the idea of knowing what's in your energy/breakfast bars. For even those store-bought that are organic and natural, need to add preservatives to make them last on the shelves. Enjoy!Read more

    WAY BETTER THAN KASHI IMHO

Rated: 5 stars out of 5
I have made these several times and love them. I do alter them slightly. I only pulse half of the sunflower seeds for the... recipe and I add craisins in place of raisins. I put the flour, dry milk, cinnamon, oatmeal all into a bowl. Pulse 1/2 the sunflower seeds and the rest of the ingredients in the food processor. Then pour into the bowl with the other dry ingredients. Stir a little so flavors blend. Then beat the eggs and add the syrup and a splash of vanilla and dump on dry ingredients. Stirring is a little difficult but well worth the effort. When throughtly mixed dump into pan and use the back of the spatula to press into corners. And actually when I want a thicker bar I double the recipe and still put into a 13x9 pan and bake longer. I really REALLY love them. My hubby eats them too. Oh and I made a pan for the engineers at my work and they wolfed them down. I agree with the earlier comment. Ellie is most definitely a Domestic and Nutrition Goddess. Read more

Better Than Anything On The Market!

Rated: 5 stars out of 5
These were so simple to make seeing as I had almost all the ingredients on hand. Anyone who follows Ellie's recipes usually... does. No, they did not have the same texture as granola, but who said they would. I don't understand some people's complaints here, they give it low ratings for the worse reasons that usually have nothing to do with the actual recipe. This is by far a five star recipe I used dried cranberries instead of raisins because I hate raisins, and it gave a nice bite to the recipe. My health nut friend said these were 10X better than the Kashi bars she always buys, and I would have to agree. Read more
