Ingredients

  • 1/4 cup shelled, unsalted pistachios
  • 8 dried figs
  • 1/4 cup part-skim ricotta cheese
  • 1 tablespoon honey

Directions

Toast the pistachios in a dry skillet over a medium-high heat until fragrant, about 2 minutes. Set aside to cool. Chop coarsely.

Cut each fig in half crosswise and place the fig pieces on a serving dish, cut side up. Make a small indentation into the cut side of each fig half with a small spoon or your finger. Put 1/2 teaspoon of the ricotta cheese onto each piece of fig and top with a pistachio. Drizzle with honey and serve.

    What a great, simple snack! It combines so many great flavors and textures - sweet, salty, crunchy, smooth. I will definitely... be making this again. The only problem was I couldn't find unshelled pistachios so I had to unshell a bunch myself and that took a little time, but it was totally worth it - it gave the nuts a great flavor! I toasted about 1/2 a cup so that I could have some ready for the next time I want this tasty snack. Will definitely make this again.Read more

    I've made this both with figs and dates. I don't know if the figs found in the Southwest are smaller than the ones available... back East, but they seemed too small and were awkward to handle. Nevertheless worth it! I recently tried the recipe with dates instead, and oh my, they were perfection. My husband doesn't care much for dates, but when I prepared them per this recipe he absolutely loves them! Thank you Ellie! Food Network, please stop moving around the times of her show!
