Ingredients

  • 4 large bone-in chicken thighs, skins removed (about 1 1/2 pounds)
  • 2 tablespoons grainy French mustard
  • 2 tablespoons Dijon mustard
  • 1 clove minced garlic
  • 1/2 teaspoon dried marjoram
  • 2 tablespoons maple syrup

Directions

Preheat oven to 375 degrees F.

Rinse chicken and pat dry. Combine mustard, garlic, marjoram and maple syrup in a small bowl. Spread about 1 1/2 tablespoons mustard mixture evenly on top of each chicken thigh, being careful to cover as much of the surface as possible to form a "crust." Arrange chicken in a glass baking dish. Bake for 45 to 50 minutes, or until mustard mixture has formed a crust and is slightly hardened, and juices run clear when the chicken is pierced.

    the mustard must makes the difference

    This was healthy and quick but it didn't really form a crispy, tangy, robust crust that I imagined. I used the hearty grain... Grey poupon combined with the Grey Poupon dijon and it tasted somewhat sweet and saucy. It is difficult to dry out a chicken thigh, so that was a plus. I served it with a baked potato and broccoli because I couldn't think of anything else to pair it with at the time.Read more

    I tried this recipe with chicken breasts and it came out great. Then I adapted it to use with salmon fillets and it is... fabulous. I don't always have maple syrup around, so I substitute honey. I use a combo of honey dijon mustard and spicy brown mustard and it tastes great.Read more
