Ingredients

  • 1 tablespoon canola oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (14-ounce) can low-sodium tomato sauce
  • 1/4 cup tomato paste
  • 1/2 cup water
  • 1/3 cup apple cider vinegar
  • 5 tablespoons molasses
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon liquid smoke
  • 1 whole rotisserie chicken, skin removed, meat shredded into thin strips (about 4 to 4 1/2 cups)
  • 6 whole-wheat hamburger rolls
  • 6 large green lettuce leaves

Directions

Heat the oil in a large saute pan over a medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute more. Add tomato sauce, tomato paste, water, vinegar, molasses, pepper and liquid smoke and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Add chopped chicken, return to a simmer, and cook an additional 10 minutes.

Split rolls. Place a leaf of lettuce on each roll, then pile on 3/4 cup of the chicken mixture onto the roll.

    I don't know what others were expecting but we loved this dish. I did let it come to a simmer and then boil for quite awhile... so maybe that is why my flavors melded together. It was so filling and satisfying. I didn't think it was tomatoey at all. I also added a little Franks Hot Sauce because we are like the Neelys and need a "kick" with everything. This makes 6 huge portions so be prepared if you are only two like we are to have people over or to have leftovers. Read more

    Ok, recipes are very versatile, especially like this one. If you've got an ounce of chef in you, you would know that your... taste buds can easily be reasoned with. Didn't like the sauce?? Add more molasses, maybe some brown sugar, garlic and such. You don't need to get on here and ruin it for first timers. Please, just comment such like, " this was not for me" but don't sit there and rant about it. I thought it was delicious. Like I said, I myself added a few extra things and made it my own. With a little extra love and your own touches it is amazing and will be a family favorite!Read more

    I bought a rotisserie chicken for this recipe like it said to do. There are 670 mg of sodium in 3 oz. of the rotisserie... chicken that I purchased at Walmart. There are supposedly only 400 mg sodium in a 3/4 c. serving of this dish that is also loaded with canned tomatoes which we all know are very high in sodium (low-sodium or not). Moral of the story...if I were making this dish again I would save my money and my heart by boiling 2 chicken breasts. However, like most unhealthy things, it did taste very good. I was leary at first, but once the sauce cooked down it had a nice flavor. Read more

    After being put on a low-sodium, low-protein diet by my doctor, I thought I wouldn't have bbq for a long time. This is... wonderful, the taste is so much better than I expected. I had it with the broccoli slaw, it was delicious and filling. I made extra sauce to use with other dishes and I'm so glad I did.
