Ingredients

  • 1 tablespoon canola oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (14-ounce) can low-sodium tomato sauce
  • 1/4 cup tomato paste
  • 1/2 cup water
  • 1/3 cup apple cider vinegar
  • 5 tablespoons molasses
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon liquid smoke
  • 1 whole rotisserie chicken, skin removed, meat shredded into thin strips (about 4 to 4 1/2 cups)
  • 6 whole-wheat hamburger rolls
  • 6 large green lettuce leaves

Directions

Heat the oil in a large saute pan over a medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute more. Add tomato sauce, tomato paste, water, vinegar, molasses, pepper and liquid smoke and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Add chopped chicken, return to a simmer, and cook an additional 10 minutes.

Split rolls. Place a leaf of lettuce on each roll, then pile on 3/4 cup of the chicken mixture onto the roll.

    This my second time making these pulled BBQ chicken sandwiches.....Yummy! The second time around I added some onion powder and about a tablespoon each of both mesquite and hickory liquid smoke. I also used about 1/4 cup pomegranate red wine vinegar and 2 tbsp of apple cider vinegar. Didn't have any molasses so I used brown sugar. Instead of water I used the liquid/broth from the chicken I boiled. I LOVE THIS RECIPE! AWESOME!

    Okay....some of these reviews are misleading. I made some minor modifications with really good results.
    used 2 tablespoons of tomato paste
    added tabasco sauce
    added 2 splashes of worcestershire sauce
    added garlic salt and increased the pepper
    The key to making this good was to let the sauce simmer for 30 minutes and cook 10 minutes after adding the chicken.
    I also used cheddar kaiser rolls.
    The whole family loved it =

    We really liked this recipe. I served ours on good bakery roll topped with light creamy coleslaw instead of the lettuce leaf. Quick and easy, for a week night meal and plenty for leftovers when serving three people. My husband cannot do spicy so it was perfect as is for him but for my son and I next time I would either put in some diced jalapenos or chipotles. We found it was even better the second time around a few days later the flavor was even better.
