Ingredients

  • 2 (14-ounce) cans white beans, rinsed and drained
  • 2 tablespoons roasted garlic
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • Salt and pepper
  • 1/4 cup parsley leaves, to garnish

Directions

In a food processor, combine the beans, roasted garlic, olive oil and lemon juice and process until smooth. Season, to taste, with salt and pepper. Garnish with fresh parsley leaves and serve with your favorite vegetables.

    I love it, my daughter loves it, it's great at parties! I make it all the time since it's easy to have ingredients on hand. I... dressed it up once for a book club meeting by spreading it out on a serving dish and topping with diced tomatoes, yellow pepper and scallions.     OK, but can be improved upon

    This was my first time making a white bean dip. Here is what I will change about it next time I make it: 1. Add more evoo... or liquid from the beans. I thought it was a bit thick. 2. Use less lemon juice. I thought it was a little much. 3. Add some dill. I added 1 tsp of dill this time around it tasted great. 4. Use fresh garlic instead of roasted. The fresh garlic adds more robust flavor as opposed to roasted garlic's sweetness. Glad I tried it. I'll probably make it a lot from now on. Thanks, Ellie.Read more
