Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2 (6-ounce) bags baby spinach
  • 1 (15-ounce) can cannelloni beans, drained and rinsed
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions

In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add 1/2 of the spinach and cook for 2 minutes until wilted. Repeat with the remaining spinach. Let the mixture cool for a few minutes.

Place the remaining olive oil, spinach mixture, cannelloni beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.

Blend until the mixture is smooth. Transfer to a small serving bowl. Serve with endive spears, crostini or pita chips.

    Great Dip for Parties!

Rated: 4 stars out of 5
I made this for a party and everyone loved it! I love garlic but not a lot of it so, with any Giada recipe I usually cut the... garlic by half. This recipe is healthy and everyone told me that the dip was good with a bit of a kick. If you like hummus, you'll like this too. Read more

    Alterations

Rated: 4 stars out of 5
I made this dip for a party and everyone loved it! The only thing was that I was trying to stretch out this recipe because... I forgot to get another can of beans to double the recipe, so instead I added a jar of marinated artichoke hearts, and forgot to add the balsamic vinegar. I will tell you that it is great! Read more

    Good, but too garlicky.

Rated: 4 stars out of 5
I think I will make this next time with either only 1 clove of garlic or no garlic at all. While the dip was tasty, the... garlic was overwhelming. It's really good (and healthy) if you dip carrot sticks into it.Read more

    Delicious and Guilt-Free Snacking!

Rated: 5 stars out of 5
I love this recipe and will be sure to make it often. I used a 1-pound bag of frozen spinach and then doubled the rest of the... ingredients. Also, I used garbanzo beans instead of the beans called for in the recipe, and they worked great. Also, I threw in an extra clove or two of garlic. Turned out wonderful!Read more
