Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup sugar
  • 1 (4 to 5 pound) watermelon, cut into 32 (1 1/2-inch cubes
  • 32 small basil leaves (or torn larger leaves)
  • 16 cherry tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt
  • Special equipment: 16 (6-inch) skewers

Directions

Combine the balsamic vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved. Turn off the heat and set aside to cool.

Starting with the watermelon squares, push the watermelon to the very tip of the skewer. Then skewer a basil leaf, then a tomato half. Continue with another watermelon, basil leaf, and tomato half. Place the skewer on a serving platter so it stands upright, using the lowest watermelon square as a base. Continue with the remaining skewers.

Drizzle the skewers with the reserved balsamic syrup and the olive oil. Sprinkle with coarse salt. Serve.

    block party hit

Rated: 5 stars out of 5
I made this simple yet delicious appetizer for our annual block party. I hadn't made it before so I was a little nervous.... There was no need as they were all eaten up!! I saw my 8 year old at one point eating one which was shocking since he "hates" tomatoes:) I was happy to have read the reviews which had alerted me to making the syrup in time to allow it to thicken. Great advice! I also will try it as a salad as other reviewers had suggested. Has anyone tried it with cantaloupe as is suggested in the cookbook if good watermelon is unavailable?Read more

    Beautiful and flavorful!

Made the skewers for a BBQ and they went fast. They were fresh, delicious and easy to make. Plus, they can be prepped ahead... of time. The longer the sauce sits the more it thickens. Pour the sauce on right before serving because it does run through the watermelon after a while. Read more

    easy, light, and gorgeous appetizer

Rated: 5 stars out of 5
Made this last night for a bbq. It was a huge hit with well-heeled women and the sporty men who love them! I had my guests... help me prepare and they had fun threading the skewers. It would be a great project to engage bored kids on a summer day! When all arranged on a simple white platter, these look beautiful. Very arty and delicious! Can't wait to do it again!!!Read more

    A curious combination that works!

Rated: 5 stars out of 5
I had the pleasure of trying this recipe at a relative's home. It was delicious and everyone was back for more! This recipe... also works if you don't want to skewer. My sister just tossed the watermelon, grape tomato halves and basil with the dressing. This one is a keeper!Read more
