For the vanilla whipped cream: Beat the whipped cream, confectioners’ sugar and vanilla in a large bowl with an electric mixer on medium-high speed until fluffy and holding stiff peaks, 1 to 2 minutes. Cover and refrigerate until ready to serve.
For the hot honey: Add the honey, hot sauce, crushed red pepper flakes and salt to a small saucepan and place over medium heat. Cook, stirring frequently, until the honey is very warm and infused with the spicy ingredients, 1 to 2 minutes. Keep warm on low heat until ready to serve.
For the blueberry maple syrup: Add the blueberries, maple syrup and salt to a small saucepan and place over medium heat. Cook, stirring occasionally, until the syrup is simmering and the blueberries have just begun to burst, 2 to 3 minutes. Keep warm on low heat until ready to serve.
For the board: Arrange small bowls of the vanilla whipped cream, hot honey and blueberry maple syrup on a board. Shingle the mini pancakes down the center of the board in a curved shape, then place the French toast sticks and quartered waffles in various piles around the board. Fill in around everything with the cooked bacon, sliced summer sausage, hard-boiled eggs, strawberries, grapes and blood orange slices.
