Escarole and White Bean Soup: Cook 3 chopped garlic cloves and some red pepper flakes in olive oil. Add 3 cups chicken broth, 1 head chopped escarole and a parmesan rind; simmer 15 minutes. Add 1 can white beans, parmesan and salt.

For Sausage-Bean Soup: Make Escarole and White Bean Soup; saute 4 chopped sweet Italian sausages with the garlic.

This soup is very easy and quick. I used chopped kale and one pound of hot Italian sausage. Like other reviewers, I used 8 cups of broth and 2 cans of beans to thin out the soup. Very yummy! I used kale(healthier choice for me! My hubby doesnt really care much for kale but he love this recipe! This was quick, easy, and tasty! I could not find escarole so substituted with kale. My husband loved it! I will be making this one again and again. This soup was soooo good! Like previous posters, I upped the recipe to include 8 cups of broth, 2 cans of beans, 5 links of ital sausage (1 pkg, and 7 cloves of garlic. I also substituted kale for escarole and asaigo for parmesan. My husband and family absolutely loved it and it is nice enough to serve for company or as an upscale appetizer/soup course. Soup was wonderful! I used 6 turkey italian sausage from Thompsonville Creek Turkey, only used a sprinkle of the red pepper flakes, upped the broth to 8 cups and used 6 cloves of garlic and 2 cans of beans so I would have leftovers with my family of 5. Excellent recipe -- just like mom used to make! Be sure to add the liquid from the can of beans to the soup as it adds more flavor. But yes, to be authentic Italian, one should use only escarole. item not reviewed by moderator and published

Go easy on the red pepper...that was my mistake...other than that, it was a pretty good recipe. Make sure to get good smoky sausage...it really enhances the whole thing. I used turkey kielbasa. item not reviewed by moderator and published
