Sausage-Bean Soup


Escarole and White Bean Soup: Cook 3 chopped garlic cloves and some red pepper flakes in olive oil. Add 3 cups chicken broth, 1 head chopped escarole and a parmesan rind; simmer 15 minutes. Add 1 can white beans, parmesan and salt.

For Sausage-Bean Soup: Make Escarole and White Bean Soup; saute 4 chopped sweet Italian sausages with the garlic.

    It was delicious but I did modify, a bit. I used kale and 2 additional cups of broth. I also used an immersion blender for about 5 seconds just before serving to make it a little creamier. It was a huge hit and I will definitely make it again.
    This soup is very easy and quick. I used chopped kale and one pound of hot Italian sausage. Like other reviewers, I used 8 cups of broth and 2 cans of beans to thin out the soup. I also used pecorino Romano rind. If your looking for a lighter sausage soup recipe, this is it. will definitely make again.
    Very yummy! I used kale(healthier choice for me! My hubby doesnt really care much for kale but he love this recipe! I used hot italian sausage and since we both love hot,spicy food, I added more chilli flakes on it.. YUM! so easy and will definitely cook this again!
    This was quick, easy, and tasty! I could not find escarole so substituted with kale. My husband loved it! I will be making this one again and again.  
    Last night I made it again, but used a bag of spinach, doubled the chicken broth and added mushrooms. Truly delicious!
    This soup was soooo good! Like previous posters, I upped the recipe to include 8 cups of broth, 2 cans of beans, 5 links of ital sausage (1 pkg, and 7 cloves of garlic. I also substituted kale for escarole and asaigo for parmesan. My husband and family absolutely loved it and it is nice enough to serve for company or as an upscale appetizer/soup course. I just served it with some nice crusty bread and butter. This is definitely a winner and I will be making this again!!
    Soup was wonderful! I used 6 turkey italian sausage from Thompsonville Creek Turkey, only used a sprinkle of the red pepper flakes, upped the broth to 8 cups and used 6 cloves of garlic and 2 cans of beans so I would have leftovers with my family of 5. I didn't use any parmesan. Found escarole at Meijers grocery
    I was kind of skeptical of this soup, but it looked delicious. I made some today and it was awesome! Delicious and very easy to make! My market doesn't sell escarole or kale, so i used spinach. This will be one of my new favorite soups!
    Excellent recipe -- just like mom used to make! Be sure to add the liquid from the can of beans to the soup as it adds more flavor. But yes, to be authentic Italian, one should use only escarole.

    Go easy on the red pepper...that was my mistake...other than that, it was a pretty good recipe. Make sure to get good smoky really enhances the whole thing. I used turkey kielbasa.
    Made it for my family months ago and was really tasty. Making it agian tonight but i'm usong bok-choy instead of escrole beacuse I couldnt find it at the super market. tatse like it cooked for hours
    I made this without the sausage. So good for such a simple soup! This is beyond easy to make. Even my boyfriend who doesn't like beans loved it and said it was refreshing. I used 2 cans of beans and 5-6 cups of broth because I wanted to make enough for 2-3 nights of dinner.... plus the head of escarole I used was huge and 3 cups of broth wasn't cutting it!
    This recipe is extremely easy to make and the final product is great, especially for it being such an easy making soup.
    I needed to make something quick for supper. This soup was so easy to make, and in no time what wonderful flavors all come together to make a hearty soup. I added more chicken broth since I have a large family, and I also added sliced mushrooms. My family kept saying MMMMMM this is really good.
    It was fast, easy, not very many ingredients, but what a wonderful zupa!
