Directions
Mix sliced roast beef with shredded carrot, sliced red onion, mint and cilantro; toss with lime juice to taste, a dash of fish sauce and a pinch of sugar. Spoon into tortilla scoops; top with mozzarella, then bake 2 minutes. Top with peanut sauce and jalapenos.

This sounds wonderful and I would like to try it but need more info. Do you shred the beef? Not sure how you get sliced beef and sliced red onion into a small tortilla scoop

So tasty! The Thai Beef is just SO juicy and the nacho gives it SUCH a nice crunch! The lime juice on top has this citrus flavor, I can't stop talking about this recipe. Eveyone that tries it is going to LOVE IT!! :
