Ingredients

  • 3 eggs
  • 2 cups whole kernel corn, fresh
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1/2 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup red bell pepper, chopped
  • 1/2 cup cracker crumbs

Directions

Beat eggs, combine with corn, butter, milk, sugar, salt and pepper. Pour into a buttered pan; sprinkle top with bell pepper and cracker crumbs. Dot with butter. Bake in a preheated 350 degree oven for 40 minutes or until loaf is

    I just made this for a large family dinner and it was a hit! Everyone loved it including the picky 5 year old. Was wasy to make and a nice change from plain ole corn. I used thawed frozen corn and worked just fine. Will definately become one of my regular sides.

    My family loved this! We ate it with fried chicken and mashed potatoes after church on Sunday. It was a nice alternative to just regular corn or corn on the cobb. Will make this again...at Thanksgiving.
